Day 1: Your Pacific Northwest travel begins in Portland

Tour begins: Portland, Oregon at 5:00 PM. A transfer is included from Portland International Airport to The Westin Portland, a boutique hotel in the vibrant center of downtown, close to fabulous restaurants and entertainment. The Pacific Northwest is fast becoming a top destination for food lovers and world-class chefs for its emphasis on fresh, locally produced ingredients, and the region has an unparalleled bounty to draw upon in its abundant seafood, vineyards, and organic farms. Join us tonight for a welcome reception at the hotel, followed by dinner at a local restaurant where the menu showcases the best in Northwest cuisine and wines.

Day 2: Fascinating Portland and wine at Mt. Hood

Take a sightseeing tour of Portland this morning; you'll discover that the city is “green,” livable, and easy to get around in with its streetcars and pedestrian-friendly downtown. Head out of Portland to Mount Hood and the Timberline Lodge, a classic ski resort and a National Historic Landmark with breathtaking views of the mountains and the national park, for lunch. Built in the 1930s entirely from locally harvested wood and stone, the inside of the lodge is as impressive as the view, with great beams, lovingly restored details, and a menu that draws on the bounty of the region. Stop for a visit at Mount Hood Winery, where you’ll learn some of the fine points of wine creation and tasting. Drive along a picturesque route that follows the river gorge and landscapes of awesome beauty, through a region famous for its tree fruit, especially pears, cherries, and apples. Get your camera ready for a stop at magnificent Multnomah Falls, cascading 600+ feet down the sheer face of Larch Mountain – steeped in Native American legend, it’s memorable! Return from this visual feast to your hotel, where the evening is free for you to explore and dine on your own. There’s much to choose from... Bon appetit!

Day 3: It's all about Seattle

Cross the Puget Lowland to Seattle, home to Microsoft, Starbucks, Frasier Crane, and a burgeoning food culture that rivals any place in America. Lunch at Salty’s on Alki Beach in West Seattle, a local restaurant with floor-to-ceiling windows that offer panoramic views of the mountains and city skyline. Seattle is a city of enclaves and neighborhoods of distinct character; today, small touring vehicles will take you into places that other visitors miss, including Pioneer Square, the historic district featuring late-19th-century brick buildings sitting atop the ruins of old Seattle's original heart, which burned in the Great Fire of 1889; and the Fish Ladder, featuring wild salmon on their great run through the waterways of Seattle. Your hotel is The Westin Seattle, in the heart of downtown. The evening is free to explore and dine as you please.

Day 4: Pike Place Market & the Space Needle

Established in 1907, Seattle's Pike Place Market is the oldest continually operating farmers market in the country, and its vast arcade houses hundreds of stalls of produce vendors, fishmongers, local food artisans and craftsmen. Immerse yourself in the waves of aromas, tastes, and color as a special guided walking tour takes you through this gourmand’s paradise with food tastings and interpretations, and introduces you to the artisans, chefs and farmers that produce it all. The market is in the commercial heart of the city, which you can explore at your leisure. Tonight, a Tauck Exclusive when you dine at Sky City Restaurant at the top of the famed Space Needle, and indulge your senses with stunning 360-degree views of the cityscape, the sound and the mountains that lie in all their sweeping splendor below.

Day 5: By ferry from the Olympic Peninsula to 19th-century Victoria, British Columbia

A ferry transports you across a narrow strait to Bainbridge, where the road will take you along the panoramas of Puget Sound to Port Angeles on Washington's Olympic Peninsula. Sail from here to Victoria, British Columbia, a picturesque city of beautifully restored 19th-century buildings and a food culture that is rich and discriminating; enjoy lunch at a local restaurant. The evening is free for you to discover the sensory pleasures of this charming city from your hotel on the Inner Harbor.

Day 6: Cider on the sea, tea at The Butchart Gardens & a floatplane ride

If you thought apple cider was brown and ordinary, you are in for a surprise at Sea Cider Farm & Ciderhouse in Oak Bay. This family-owned orchard turns its organic heritage apples into ciders that you might mistake for wine – clear, robust to delicate, still to sparkling, with sophisticated flavors and aromas. Discover them for yourself as you sip cider by the sea in tastings expertly interpreted and paired with savories. You’ll then arrive at The Butchart Gardens, family-run since the 1920s, and a major draw for garden aficionados from all over the world: 55 acres of floral shows, elegantly landscaped with statuary and fountains. Lunch today is afternoon tea at the original family residence, surrounded by floral splendor and including a sampling of local wines. On your return to Victoria, a floatplane will fly you to Coal Harbour in Vancouver where you'll enjoy a two-night stay at Four Seasons Hotel Vancouver, rising above Pacific Centre in the heart of the city.

Day 7: Rainforest treetop adventures and more in Vancouver

With its cornucopia of sea, farms and vineyards, Vancouver is an epicurean powerhouse in a lovely natural setting that has captured the attention of gourmands around the world. At the Capilano River, a breathtaking “treetop adventure” offers you a squirrel’s-eye view of the coastal rainforest in the treetop canopy along a footbridge network and the cliffwalk, a pedestrian walkway with a view of the valley formerly available only to rock climbers. Explore nature closer to the ground at Stanley Park and in the historic Gastown district, an up-and-coming foodie-magnet where you'll enjoy lunch on your own. Following a free afternoon to explore more of Vancouver as you please, join us this evening for a farewell reception and dinner at a local restaurant that marks the conclusion of a fabulous week of Pacific Northwest travel.
